Wow everyone, what a challenge that was! I think we're all a little amazed how poorly we judged our veggie intake in the past. From Induction to Maintenance we had a wide spectrum of VEGGIE eaters in this challenge!
Everyone did a terrific job!
I think the lessons learned are invaluable to us all. VEGGIES are good for you, VEGGIES are yummy, VEGGIES are filling, eating the proper amount of VEGGIES each day helps keep us in the proper range for all foods eaten, no one ever became overweight from eating VEGGIES and furthermore, Dr. Atkins was right, VEGGIES are an important part of our diet.

We must give Honorable Mention to mickkey for being the most improved throughout the week. She started the challenge with only 4 net carbs on day one and ended the week with an average of 13.17 net carbs per day!
