So last night over dinner we were talking about baked alaskas.... no we didn't have one we were just discussing the process of making one when it occured to me that Meringue cookies could easily be made the Atkins way.
So I got some eggs, spelnda, cream of tartar and vanilla out and went to work and Voila! (I modified a recipe from foodtv.com - credit where credit is due).
3 egg whites, at room temperature
1/4 teaspoon cream of tartar
1/2 cup of Splenda (not the packets - the one that you measure like regular sugar)
1 teaspoon vanilla
Preheat oven to 200 degrees F. In a large bowl with an electric mixer beat the egg whites until frothy. Add the cream of tartar and Splenda slowly. Beat until the egg whites are stiff and shiny, beat in the vanilla. With a spatula put the egg white mixture into a pastry bag fitted with a large star tip Pipe 2-inch meringue "kisses" on a parchment paper lined baking sheet, at least 2 inches apart. Bake in the middle of oven for 2 hours. Turn off oven and leave the meringues in it for at least 2 more hours or until meringues are completely dry.
This recipe says you should get about 50 small Meringues. I fit about 25 of them in 'scoops' on the two cookiesheets that I have that will fit into my oven together.
PS - I didn't bother with the pastry bag - I just spooned them onto the parchment and let them go. They were pretty sweet so you might want to experament on the splenda amounts - they were plain but good if you like meringues which I do. For the Owlsters you could add in some nuts, dried berries or even bittersweet co-co to dress them up a bit - count those carbs.
As for the carb count - Near as I can figure out the entire recipe comes to about 26-28 Carbs (my figuring could be wrong) so it could be around 1 carb per cookie (the larger ones) so figure it into your daily totals.
Everything on the list is induction legal so these cookies should be as well.
