  • Baked potato question

Ok...I know baked potatoes and this site don't mix too well, but I was just curious about something: If I were to bake a potato and carve out all the white part and leave nothing but the skin, does anyone know if that part is also loaded with carbs?

My thought was that I could take the skin, add some butter, grated cheese, chives, a bit of sour cream and some real bacon then toast it in the oven. Yum.

By the way, in the same vein, here is something that IS legal. And delicious. You HAVE to try it....

At the grocery store, buy some whole green jalapenos. Also get some chicken (canned chicken works fine!), cream cheese, grated cheese, onions, and diced tomatoes or picante sauce.

first cut 10-15 jalapenos in half and carve out --and remove-- all the insides (seeds and inner septum) with a knife or spoon. (This is the HOT part!) Then fill in a spoonful of cream cheese. Then place chicken, grated cheese and onions/tomatoes on top and put in the oven for about 20-25 minutes at 350 or so.

Thats it! It's incredible. One of my favorite meals. When The jalapenos come out of the oven they seem to lose much of their "hotness".

The skin is very thin and you'll be left with something that tastes like dirt---dry, paper-like dirt. It's also hard removing all of the flesh without tearing the skin. You're better off making the faux baked stuffed potato recipe using cauliflower instead.
