I've tried this recipes twice...boiling the cauliflower the first time and nuking the second. They end up wet and grainy. Do they ever get smoooooooth or am I cooking them wrong? Everyone raves about them and all I get is yuk. Then again...I'm no great cook

I always steam mine and they come out OK. I think the key is a fine dice, kind of like hash browns. I've never tried it, but if you want to try for completely smooth, you might try running the cooked cauliflower through a food processor. It's OK to experiment!

Default Potluck success

I made this dish for a potluck at work this week, a co-worker just called me for the recipe!! It was sooo good and soooo easy and soooo not cheating. I did however make one change, I didn't have a full C of sour cream in the fridge so I added some softened cream cheese to the mix.

I'm bringing this one back to the top! I made it last night and this dish wins my vote for best cauliflower recipe ever. Even my picky, carb-lovin' boyfriend liked this one!

This does look good. I actually use turnips with almost the same ingriedents and my boys love it.

Cauliflower is so versatile. It makes wonderful MOCK pototoe salad, mash taters and is pretty good just by itself.

Thanks for sharing.

BTW, my spelling is horid today...but I'm not sweating the little things!

Just so you know I made this tonight and you are right it is the best cauliflower dish I have ever tasted in my life. It may even be the best thing I've eaten while on this way of eating. I put a link to this post on my postings about easter dinner ideas. Thanks for such a great idea!

I thought I would update and tell everyone again how great this recipe is. I just reheated it in the microwave and had it for breakfast. Yumm! This may be one of those recipes I make once a week!
