Default Refrigerator Slaw? My first low-carb experiment! :)

Ok, my Mom has been making a slaw called "refrigerator slaw" forever. It had a cup of sugar in it, but I just made it with a cup of Splenda instead. Here is what it is:

1 head cabbage
1 medium onion
1 bell pepper
All of this is chopped fine.

On the stove, you heat 1 c. Splenda, 1 T. mustard, 1 c. vinegar, 2/3 c. oil, 1 T. celery seed, 1 tsp. salt and 1 tsp. pepper. You bring that to a boil and pour over the veggies. Then, you leave it alone and let it sit. It is better in the days after you make it. This makes a HUGE bowl of slaw (12 cups). As long as I only eat like a cup of it, will it be ok to have on Easter? I am only on DAY 2 of induction.

One 1 cup serving will have about 1 1/3 tablespoons of Splenda or 4 teaspoons of Splenda. That is over the daily sweetener limit because 1 teaspoon of Splenda is 1 serving? However, if you eat 1/2 cup, you will being using 2 of your 3 daily sweeteners.

I make a "slaw" just using mayo and dill weed, that way I can have the cup of it. It's delicious to me, especially since I'm not a big fan of sweet coleslaw. My hubby is a fan of the sweetstuff and he just raves about this one.

I don't love this, but it is something I eat every Easter. I made it this year instead of my Mom and I am not telling them that there is Splenda in it instead of sugar. Do you think that they will notice?
