Default YUMMY creamy bruchetta (without the bread, of course!)

I am excited to post a new "creation" I came up with in the kitchen this afternoon. My Grammy makes this awesome creamy, cheesy bruchetta mix, and I have been craving it like crazy - putting it on meat, in salads, anything to have that flavour again. The results have been satisfying, but not as good as the real thing. But today... PAYDIRT! Inspiration struck and woke me out of a dead sleep (I wish I were kidding...) and before I knew what I was doing, I was sprinting to the kitchen, furiously rooting through my veggies until I found the most ripe, plump tomatoes you have ever seen in your life.

Well, I sliced those suckers right up, cranked my oven to, like, 500 degrees, and got to work. Here's the basic mix (sans measurements, since my Gram is one of those 'go by how it looks' cooks).

about 2 diced cloves of garlic (the breath will be with you all day, but it's worth it)
some sliced black olives (optional - not everyone is an olive lover)
shredded cheese ( I like mozza or marble, but what the heck - get creative!)
oregano
salt n' pepper (if you want, but not too much, the olives and cheese make it plenty salty)
a couple dollops of mayonaise (enough to make the mix spread-able)

Throw that on top of the tomatoes (sliced fairly thick) and heat for a few minutes (10-ish) THEN hit the broiler and wait for that cheese to bubble... Holy Hannah! Like nothing you ever thought was legal...

What's great about this dish is you can make small servings for a snack, make bigger servings and call it a pizza. Depending on what you're willing to "spend" carb-wise will determine how much cheese, olives, mayo, tomato slices etc. I wouldn't skimp too much on the garlic, though - no less than a clove, since that's what I think gives it all the flavour. And if you want to save yourself some carbs, take the time to dice the garlic and stay away from the garlic powder or salt.

looks good. if you puree the olives and garlic in the blender with the mayo and cheese you could spread that on any veggie and broilc or not for a great tasting change.

We could even stuff some chicken breasts with it or a pork chop.

That sounds amazing!!! Tomatos are one of my trigger foods so I really can't try this without going nuts, but I thought I'd let you know my imagination appreciates it!

I just made this. It's soooo good. So so so so sosososo good. Did I mention that IT'S GOOD??

Since I don't like olives, I left them out. The next time I make this, I might chop up an onion and toss that in and see how it works out.

Ahhhh! I found another use for this stuff. I put it on chicken and I put it on a hamburger. Mmmmm!

OK, I think I've become some sort of monster. I'd mix up this stuff up and PUT IT ON MY BODY IN THE SHOWER EVERY MORNING! Seriously, I'm obsessed with it.

How do you think it would be on a mock danish? (Just kidding!)
