Default broccoli cauliflowr salad

1 head broccoli
1 head cauliflower
1/2 cup red onion, minced
1/2 pound bacon fried crisp and broken into small pieces
8 oz shredded cheddar cheese
1 cup mayo
1 cup low carb ranch dressing

Break up the broccoli and cauliflower into small bite sized pieces and place into large bowl. Add all the rest of the ingredients and toss. It is hard to give an exact carb count on this depending on the size of your broccoli and cauliflower. But, it is all stuff we lo carbers can eat.

i've have had a recipe like this in my family for years! its great. The only difference in my recipe to yours is instead of using mayo and ranch dressing, we make a dressing out of vinegar, miracle whip ,and sugar. since i can swap the sugar for splenda, I wonder if miracle whip is acceptable.......hmmmmm i feel a craving coming on lol

Carb options makes a miracle whip substitute I dont know much about it. I always just use mayo, splenda and some white wine vinegar MMmm makes great coleslaw dressing too!!

The recipe I have used for years is:

2 heads of broccoli

mix together-
1 cup mayo
3 tablespoons of Splenda (sugar)
2 tablespoons of cider vinegar

toss onto broccoli, then add
1 cup shredded cheddar
1# bacon, crumbled
1/2 red onion thinly sliced


My Mom used to put raisins in it, but i never liked them anyway. This is the best salad of all time. I could eat this every day...

I usually keep the bacon aside until just before it is served. I like it crunchy :yes

My boss lady brought me something like this but she had changed it a little bit.

Brocolli
Cauliflower
Bacon PIeces
Chicken Pieces
Boiled Eggs
and ranch dressing

OMG It was GOOD!! I imagine putting cheese on it would add to it.

this is my version--tweaked just a little bit!

1 large head of broccoli
1 large head of cauliflower
bacon pieces
shredded cheddar
shredded monterey jack
1 package of cream cheese
1 spoonful of mayo
chopped onions
chopped peppers
salt & pepper
garlic salt
chopped parsley

--cut the broccoli and cauliflower into tiny pieces, saving the stalk part for soup or something.
--mix the cream cheese (room temp) with the mayo, salt & pepper and garlic salt
--mix onions, peppers and cheese together and pour on cream cheese mixture.
--combine

i didn't leave specific amounts in terms of seasonings because it's by taste. if you feel like you need more salt and pepper, by all means add more...i always add parsely on top, just to give it a nice finish.

i eat this with cheese crips...combine a bunch of different cheeses (whatever is on hand) and arrange on a baking sheet or on the stove in a pan and heat until melted together. let it harden and viola! cheese crisps...a very good side to this salad.

this salad,being that it's soo big, lasts FOREVER, and i'm not sick of it!

i've added shredded chicken to it numerous times--you can also add boiled eggs too--if that's what you desire!

I was going to add this recipe, but I see somebody else has already posted another variation on it.

I thought I'd add my own way of making it, in case it helps someone else. I regret that I don't really measure anything when I make this, but the "eyeball" measurements are very intuitive...

Bite sized fresh broccoli and cauliflower, as much as you like.
Enough Mayo to hold it together and no more than that. (For 2 cups of brocco/cauli, a tablespoon seems to be more than enough mayo.)
Real bacon bits
Shredded Cheddar
Seasonings to taste

The really finely shredded cheddar seems the best, and I just use enough bacon bits to give it a bit of additional flavor. This one works the best when it's adjusted to taste. I try not to overuse the mayo... just enough to coat things and hold the bacon bits and cheese to the rest of it.
