Thanks Suzan! I love cole slaw and have always had difficulty finding a suitable replacement. I'll definitely have to give this a whirl!

That sounds great! I usually make cole slaw with a mayo, sour cream and balsamic vinegar dressing; but I will definitely try this for a different taste.

Pizzaman,

Your recipe is similar to the one on www.atkins.com.

They use red cabbage, red onion, balsamic vinegar, sour cream, mayo, tarragon, and just a pinch of splenda.

That may very well be where I got from. I was on Atkins the first time in 1995. At that time, I just wrote down all recipes that I liked but did not keep track of where I got them. So now I have this great collection of recipes but don't remember who to thank anymore.

cole slaw for life:
1 bag of shredded cabbage (net 9 carbs whole bag)
big scoop (sometimes 2) of mayonnaise (0 carbs)
3 teaspoons of apple cider vinegar (0 carbs)
1 pack of splenda (trace carbs at most).

so that means a whole big salad bowl of creamy cole slaw has 9 net carbs????!!
9 net carbs!!!!!!!

I am going to eat a big bowl of cole slaw every night till i am sick of it.
