| Gee and I always thought the mashed cauliflower was safe to eat, but they add corn starch and sugar to it. Ah well, they don't serve it anymore so guess it doesn't matter now.

| Yes, let's make it clear that this recipe is not Atkins friendly. I thought it was safe to eat also and have had it a few times in the past. The weird thing is Ruby Tuesday went almost completely the other way in that they used to have lots of Atkins options, but now they have very little entrees you can even make Atkins friendly. Just removing the cornstarch and sugar probably won't affect this recipe very much and would make it much more friendly. Thanks for posting Jessica!

| That really gets me that they put cornstarch and sugar in it and called it low-carb. Goes to show you that one person's definition of low-carb is different from another ! Thanks for the recipe though .. I'm gonna modify it and try it at home! Betty

| If you omitted the cornstarch and just added splenda instead of sugar, this would be atkins friendly right? You could also omit the second cooking on the stove, I would think, as the purpose of the 2nd cooking would be to allow it to thicken with the cornstarch. Cheese could act as a thickener instead of cornstarch too..
