Spaghetti Squash Slaw | Cook your spaghetti squash (I boil for 20 minutes, or you can nuke). Remove the strands and let sit in cold water until chilled.
Make your favorite low-carb cole slaw dressing. Here's mine:
0.5 cup mayo
0.25 cup heavy cream
2 T lemon juice
1 T vinegar
0.25 cup splenda
Drain the squash well, then toss with the dressing. Salt and pepper to taste. | |
