Default My Amazing Spinach Quiche!

I made up this recipe last week and we have it all the time now! We even had it the other night as an after dinner snack (aka dessert). Induction Friendly!

3 eggs (1.8 carbs)
3 oz cream cheese (philly cream cheese----3 carbs)
10 oz package of spinach (5 carbs)
.5 cup parm cheese (4 carbs)
1 tbsp heavy cream (.5 carb)
2 Italian sausage links (I use hot sausage)
couple ounces parm cheese for the top! (depends how much you use for carb count I usually do an even layer so it probably adds another 2 carbs to the count)
14.4 divided by 8 = 1.8 carbs

(edit: I also add garlic powder to the mix---if you do also make sure to add in those carbs too--the powder we have is really strong so a little bit goes a long way)

(serves 8--- roughly 2 carbs each--I haven't done the math perfectly you can check for yourself--but I'm about 90% sure it's around there... sorry)

First take the sauges and squeeze the meat out of the casings and cook in frying pan. I take a fork and knife and separate the meat into pieces like ground beef. (you can use any meat if your concerned about sodium, etc however the sausage adds a nice interesting zing to it, so I highly recommend adding it.)

ok so next you heat up the cream cheese in the microwave to soften it up (30 secs) and mix with eggs, heavy cream and parm cheese. I use a hand held mixer so that the cream cheese blends completely with the rest of it.

Next I microwave the spinach and then add both spinach and sausage to the wet mix. You can either spread into a large baking pan or use a muffin tin to get carb counts exact. My sister has a muffin tin that's in the shape of little rectangular loaves, they came out perfect in this tin. Publix sells the tin for 10$.

Top off mixture with parm cheese evenly over the top. Bake for 25 mins at 360-370 degrees (depending on your oven, mine cooks about 15-20 degrees cooler then it should so I cook it at 375 degrees.)

Last night I cooked this for my sister at her apartment and her stove top was broken so I had to microwave the sausage for approximately 1-2 mins instead of frying it up and it came out perfect regardless so this can be a very QUICK side dish if you shy away from more time consuming recipes.

I've made it in a just a regular square glass baking dish too. I love how it comes out golden brown too! You should've seen my boyfriends face when he bit into these, we both had 2 "muffins" with our dinner and after taking a bite from the first one he calmly put the other one in the fridge so he could have it again later for "dessert" (not that it's sweet it's just that they are that scrumptious).

19 divided by 8 = 2.3 carbs
I am just curious on these carb counts. An egg is .6 and I am not sure how you got 4 carbs for three eggs. I want to make sure I get this right because I think I might just do this for breakfast each day. It sounds easy and good. I would use hard parmesan (shredded) and it is only 2 carbs for a 1/2 cup. So basically when I make the recipe (which sounds delicious) I would subtitute mushrooms (hate spinach) which is 2 carbs. So...

3 eggs (2 carbs)
3 oz cream cheese (philly cream cheese----3 carbs)
1 cup mushrooms (2 carbs)
.5 cup parm cheese (2 carbs) (half in the recipe/half on top)
1 tbsp heavy cream (1 carb)
2 Italian sausage links

10 divided by 8 = Less than a carb per serving.

Did I do that right?

I took a screenshot so you can see, it is for a Large egg maybe that's the difference...
