Default Swede/Rutabaga gratin

This is very, very, very good. Pretty high calorie though, so probably not an everyday dish. Probably too high carb for induction, and anyway swede/rutabaga is not on the induction list. Would probably work just as well with turnip though, but I've not tried it.

Swede (UK/Ireland) and Rutabaga (US) are the same thing BTW.

Ingredients

1lb of peeled swede/rutabaga
0.5 small onion, thinly sliced
1 clove garlic, finely chopped
3-4 sprigs of fresh parsley, chopped
4 fl oz cream
4 oz cheddar cheese, grated
Nutmeg, paprika, salt and pepper

Slice the swede into very thin slices, about 1/8 inch thick - it's awkward to work with, but the shape of the slices does not really matter, just the thinness.

In an oven proof dish, put a layer of swede, sprinkle over half of the onion, garlic and parsley and about a quarter or less of the cheese. Repeat. Finish with a another layer of swede.

Season the cream to your own taste, then pour over the swede. Spread the rest of the cheese over the top.

Cover the dish tightly with tinfoil (or a lid) and bake at 170C (about 350F) for 40 mins. Uncover and continue to cook for about 20 mins, or until the top is well browned.

Serves 4.

I used a dish about 9" x 5" which allows three layers.

Here's what it looks like when done - and on my dinner plate this evening, with a homemade burger, mushrooms and broccoli - there is about 13g of net carbs on that plate.

i love it when you all put pics with recipes!! definitely gonna have to try me that!!


ps.. any special recipe for your burger? mine always turn out dull and boring in taste, just taste like flattened ground beef!!

The only thing I add to the burger is some seasoning. I like a little piri-piri spice in it. I've finally got my camera working again - so I'll take piccies of anything I post in future, I like to see them too.

Emma: for your boring burgers - I think I can help you out ;D Make two thick/thin patties - on one stick cheese/jalepenos or swiss cheese/mushrooms and stick the other patty on top and press together to seal in the good stuff Season outside to taste. Then just fry, broil or BBQ

I like to season mine with very little salt, some pepper and garlic. Also in the states McMormicks makes a great Steak Seasoning - that is more like a pepper mill - which tastes wonderful too, but I don't know if you have that over in the UK.

sounds like a good plan! not sure they have that seasoning here, i think the seasoning is where i go wrong, i never know what to put in it...

Ive been having store bought ones every now and again, managed to find some that had pretty much no illegal fillers but at $6 for 4, a tad expensive!

will definitely attempt to make my own some time soon!
