Default Tasty Turnip Bake

We tried this as a side dish the other day with eggs, bacon, tomatoes and mushrooms. It was really yummy, and is definitely going on the list for a repeat performance. The turnips didn't really taste 'turnippy' (good word!) - more like potatoes in a potato bake - that may differ depending on the type of turnip you use - I used medium sized green/white ones.

Serves 2 (amounts not too critical - you can play around with it)
8 oz turnips
1 small onion
2 oz cream cheese
8 thin slices Chorizo (no sugar) - or you could use no sugar Bacon
Pepper and Garlic Salt to taste
Few small knobs of butter.

Peel turnips and slice into pieces approx quarter inch think and one inch square. Steam until just soft. Meanwhile peel and slice the onion thinly and fry in fat of your choice until quite browned. Drain turnip pan and return them briefly to the pan to dry them out. Stir in the cream cheese, and mix well. Add pepper and garlic salt. Fry the chorizo (I used the leftover onion fat for flavour) until cooked then chop into pieces and add to the turnip mixture. Dot with butter. Mix well and turn into ovenproof dish to bake. I baked mine for approx 25 mins at 180C (360F) - but I had let it cool down before putting it in the oven - so if you were puuting it straight in the oven you wouldn't need so long.

You could probably get away without cooking the chorizo first, but I'm always careful about anything 'pork' being cooked enough - so I'd rather do it twice, and the chorizo pieces on top get a little crispy, which we like.

If you had enough cheese left for the day you could sprinkle some more grated cheese on top. You could also add some cream./sour cream to the mixture ...

We have had this several times now. My hubby asks for it, and he didn't even like turnip before. Enjoy!

Sunny - I 'kind of' made it up! I've seem some similar recipes, but not kept a copy of them, and one night I was just wondering what veg to have, and this is what I ended up with! So there may be a similar one out there somewhere, but I think I'll lay claim to this one!

I made it and it was extremely yummy! Too good, in fact. I was starving, so I ended up eating it all. I ate breakfast at 7:30 and didn't get around to lunch until 2:40. I had too much cooking going on for a bake sale at church.

I used bacon and I put crimini mushrooms in mine. I browned the onion in bacon grease, then browned the sliced mushrooms in it too.
