Hey Megs, look what I've found! | | Gazpacho con Tropezones! It's really good, imo. I like it more than Patricia's... but then it's true that I am not haunted by the taste of bad V8, because I never tried that stuff. And I never tried mowed grass either.

250 g tomatoes, peeled, cut in wedges
40 g cucumber, peeled, diced
25 g green bell pepper, peeled
25 g red bell pepper, peeled
1/2 very small white onion (about 20 g or so)
1 small clove of garlic
1-1/2 tbsp olive oil
1 tbsp sherry vinegar
~1/5 tsp sea salt
a pinch of black pepper
This makes a very big serving or about two 1 cup servings. I served it with some veggies (a thin slice of cucumber, some green and red pepper) and five crushed, roasted pistachios. I should have drizzled some olive oil on top, but I forgot. (I'm like Dory, the fish from "Finding Nemo" that forgets everything in a second. I keep forgetting to add salt, to add olive oil... )
Nutrition facts (for the whole thing, incl. 5 pistachio kernels): 269 calories, 22.1 g fat, 16.5 g carbohydrate, 4.9 g dietary fiber, 11.6 g net carbs, 3.8 g protein. | | |
