Wink cucumber and cream cheese sandwiches

these are wonderfully refreshing. They are made up of exactly what they are said. You take a cucumber (I like to peel it) and slice it and then spread some cream cheese between two slices and make a "sandwich" out of it. You can add in some "meat" of you choice if you like. Like tuna or you can cut some lower carb deli meat into smaller squares and put on it. I actually like it just the cream cheese and the cucumbers because it is so refreshing. And it gives me a break from meat when I need it. I eat it as a snack or add a few olives and a couple cubes of cheese to my plate and make it a lunch....oh so yummy!

If you like cucumbers, check out this recipe I posted for cucumber salad. Paula's Cucumber Salad I believe this is induction friendly (I leave out the sour cream to begin with), but with the vinegar it's not KISS friendly. I make this literally every Friday and it's nearly gone by Monday. Yum Yum!

thanks that sounds amazing I love all these recipes...I was already getting in a "slump" it won't take me long to get out though.

BUMP!
I had a few friends over this evening and served these "sandwiches" as an appetizer. It was a big hit! I used smoked turkey lunch meat (which is just as good as those sugary ham lunch meats, minus the sugar). Very yum!
