| If you like cucumbers, check out this recipe I posted for cucumber salad. http://www.atkinsdietbulletinboard.c...ad.php?t=25058 (Paula's Cucumber Salad) I believe this is induction friendly (I leave out the sour cream to begin with), but with the vinegar it's not KISS friendly. I make this literally every Friday and it's nearly gone by Monday. Yum Yum!

| BUMP! I had a few friends over this evening and served these "sandwiches" as an appetizer. It was a big hit! I used smoked turkey lunch meat (which is just as good as those sugary ham lunch meats, minus the sugar). Very yum! |

| I made this snack for my husband (who laughs at my new diet) and myself the other day. We used slices of peeled cucumber, pinches of c.cheese topped w/ some smoked salmon. Then drizzle w/ ex. virgin olive oil, some salt and pepper to taste... and yuuuuuuuuuuummm. Totally refreshing. |
