Default Pepperoni Nachos

I kinda stole an already posted idea and modified it, and it's really rather yummy


Take you pepperoni and micro it on a paper towel for 45 second.

Scoop the pepperoni onto a place and cover with 2 oz of mozzerella cheese, a little bit of chopped green onion and 2-3 slices of jalapeno.


It's soooo yummy Pepperonis are still crispy and they are "loaded" like nachos. You could probably even put a spoon of sour cream and salsa if you like

After you put the mozzarella on the pepperoni, do you microwave it again? I gotta know. Please post.

Thank you for this recipe! I tried it and loved it. I modified it a little though. That is what I Love about it, you can adjust it based on what your in the mood for.
I love mushrooms, so I take and place the mushrooms on a cookie sheet, place a mushroom slice on each pepperoni piece, top with mozzarella cheese, jalapeno pepper, whatever you like. Just adjust the carb count based on what you use. I put them them under the broiler for just a couple of minutes and there nice and crispy and chewy at the same time. One hint though for placing them in the oven, take them off the cookie sheet immediately after they come out of the oven and place them on a paper towel to soak up some of the excess oil.

Default OMG - the Pepperoni is so Good!

I didn't have any of the other ingredients except for the Pepperoni, so I nuked like you said. OMG, That was SOOOO good. Too bad, I only had two slices of pepperoni left.

Default try turkey pepperoni!

I make these using turkey pepperoni from hormel! Far fewer calories and less fat but still crispy!!

Wahoo! Can't wait to get to the grocery store! If we can only keep our daughter from wiping out the pepperoni...

It sounds great. I may have to do some experimenting...I'll post my results soon.

This is very good! I just tried it, i needed a snack because dinner will not be ready for a few hours yet....it was an AWESOME snack and filled up my hunger for now :icondance

I love making pepperoni crackers. I do the same thing with cheese. Gordon's Foods (GFS) - if you have one near you - has some great sliced cheddar that is pretty cheap for the amount you get. I think it's less than $6 for 2 pounds or so. They come with little pieces of paper between them, which is nice. I just take one slice and nuke it for about a minute. Pretty handy and easy!

Sam's Club probably has about the same thing. I think they are all the same company. Those crispy pepperoni make good dipping crackers, too. We use ALOT of pepperoni and cheese around here.......hubby is a cheese freak. Plus, we snack on pepperoni right out of hand around here, and even did that pre-Atkins. :nod

It's also good snacking to take a piece of cheese, lay on a few jalapeno slices, nuke 'til crispy and have a spicy cheese cracker. The options are endless! :joy

We do more snacking around here when the weather is hot because i REFUSE to cook! :yikes Nothing like standing over a hot stove when it's 95 degrees outside!
