Default Cinnamon Bun!

Well I was just experimenting tonight and I came up with my version of an induction cinnamon bun. So I thought I would share since it was delish!

Tamara's Induction Cinnamon Bun

Ingredients

1 egg
2 tablespoons of butter
1/2 teaspoon of baking powder
2-3 tablespoons of cinnamon
3 pkts splenda
3 tablespoons flaxseed
2 oz cream cheese

Bun:

Find a circular shaped dish or small bowl.(If you dont have one anything is fine except it will be more like cinnamon bread)

melt butter first then add 1 egg - stir vigorously until mixed
add 3 tablespoons of flax
add baking powder
add cinnamon and 2 pkts of splenda
mix.

Let stand for 2 minutes.

Microwave for about a minute and 45 seconds until it has risen and is fluffy in the middle. (may be slightly different depending on your microwave.)

Icing:

Mix cream cheese and 1 packet of splenda. Add a dash of cinnamon if you like. Microwave for 20 seconds.

When topping is done drizzle over the bun and voila induction cinnamon bun. These are pretty tasty!

Carbs -

0.5 x 3 - splenda = 1.5
egg = 0.5
flax = 0 - 0.5

So it comes out to about 2.5-3 net carbs. This might use up your splenda servings for the day so watch the splenda. If you go over just forget the icing all together and drizzle it with butter and cinnamon.

Tamara

Looks like a great recipe, but your carb count is off quite a bit.

The 3 tbsps of flax is 10 carbs less 5 fiber, 5 net carbs. Splenda is 1 carb per pkt for 3 more, 3 tbsp of cinnamon is 6 carbs(!), the cream cheese is another 2 carbs, and the baking powder is 1! So that's 22 carbs, less 5 fiber, for 17 net carbs. Sorry... the only reason I questioned it is because I just sat down to record my 3 tbsp of flax for breakfast, and knew it was 10 carbs (less fiber).

Anyone new to this WOE, please make sure you look at every single ingredient for the carb counts -- thinking it's 3 net carbs and having it actually be 17 is enough to have you posting "Why aren't I losing??" real quick!!

If you need help with your carb counts, use www.fitday.com - it's free and a good way to track your carbs closely.

Happy New Year!

Can you omit the flax seed and would it still work?

Just make sure you read Joan's carb calculation above! 17 carbs pretty much uses up your allotment for the day if you are in induction! :yikes

I had read this post when it was first listed and then saw the post with the carb counts and said SEVENTEEN - not going to make this recipe!! But then last night I read another post by cobradan that questioned the carb count. I went back to the recipe and figured I could tweek it to work bec ause it sure sounded yummy. So I modified it - used just 2 teaspoons of cinnamon, 2 packets splenda and no cream cheese. It was wonderful!!

While I think the original count was a bit low, the count of 17 grams is a bit high.

One egg is anywhere from .2 to .6 carbs depending on who you trust, so I'll just count it as half a gram.

2 tablespoons of butter, no carbs.

.5 tsp baking powder is .5 grams carbs (from the fillers)

3 Tbl cinnamon is between 3 and 5 grams carbs, so I'll settle on 4, again, depends which reference you trust.

Splenda is a little less than 1 gram per packet. There are 12 mg of sucralose per packet, so that leaves .88 grams of filler per 1 gram packet. The bulk fillers used are slightly less potent than pure sugar, which comes in at around 1 carb per gram, so, I would count each Splenda packet as .75 carbs, so, 2.25 grams from the splenda. Now, if you can use liquid splenda or DaVincis syrups, this becomes 0.

Each tablespoon of flax seed is between .5 and 1 grams of carbs, again depending on who you trust. I will go with a median number, .75 grams, so 2.25 grams carbs from the flax.

2 Oz cream cheese is about 1.5 grams carbs.

So, add it all up we get: .5 + .5 + 4 + 2.25 + 2.25 + 1.5 = 11 grams per bun. So, still fairly high for an induction recipe, but not as bad as 17 grams.
