Default Yummy flax crackers

I usually have flax cereal for breakfast, but wanted something different this morning. I made flax/wheat bran crackers -- and they were good!

2 tbsp flax meal
1 tbsp wheat bran
1 tbsp parmesan cheese (green can kind)
1/2 tsp red pepper flakes
1/2 tsp garlic powder
3 tbsp water

Mix all ingredients well and let sit for a few minutes to make sure all the water is absorbed. Spoon out 6 portions on parchment paper. Gently flatten each cracker with a fork until they're quite thin. Microwave on high for 3-5 minutes, or until you touch them with your finger and they feel dry. Remove from parchment paper onto a plate and let them cool.

6 carbs, 3 fiber, so 3 net carbs for all 6 (large!) crackers. I had some tuna salad on them. Yum!

I've made these flax crackers a couple of times (without the wheat bran) and they are great! Perfect with cheese! Thanks for sharing, and I plan to experiment with the recipe, too.

I made these today and brought with my lunch - I put tuna on them and they were FANTASTIC!!! I was out of the canned kind of parmesan this morning so just cut some shredded parmesan into it and I didn't use the wheat bran. They still turned out great!

I know, I just love them! I've experimented with a sweet version as well, which tastes like a healthy cookie. Here's the recipe that I came up with:

3 Tbsp. Flax Seed Meal
1 Tbsp. Wheat Bran
3 to 4 Tbsp. Splenda (or to your taste)
Dash of salt
1 tsp. allspice (or you could use pumpkin pie spice or apple pie spice)
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. ground ginger
4 Tbsp. of water (or enough to make it spreadable)

Mix all ingredients together and spread thinly on a parchment lined (or oiled) microwave dish.

Cook in microwave on high for about 3 minutes, until the cookie is dry to the touch. You can divide the mixture to make smaller cookies, but I found it just as easy to break off pieces of the large cookie.
