Default New Snack Discovery

Hi.
My biggest problem for the three weeks I've been living this low carb lifestyle has been what to snack on. This has been especially important since I've discovered that, eating this way, I don't - or can't - eat nearly as much as what use to be normal. So sometimes I do get a bit hungry between meals, not always, but at times I do.
I am constantly searching for new snack foods, and today something just popped into my mind that sounded delicious. So I made a run to the supermarket to get what I needed. It' so simple really, but was it ever good.

I took some Pepper Jack Pimento Cheese, added about the same amount of sour cream, and just a tad of mayonnaise for that extra, salty taste, and mixed it all together. Then I took several long lettuce leafs and spread the mixture thinly on the leafs, then just rolled them up into little logs. I stuck a toothpick through the center to hold them together, and took them to my desk - and totally enjoyed my afternoon snack.

That sounds good!

I'm not sure if you used pre-shredded cheese...and I'm not sure if anyone warned you about it...but here it is just in case: pre-shredded cheese is coated in starch to stop it sticking together (who would have guessed???) So it is best to shred your own
