| Hi Elizabeth! Warm welcome. Feel free to write whenever you need it. Concerning the meat I am wondering if you just don't like other meat than chicken or if you are kind of a "half-vegetarian"? I had some issues with the meat in the beginning as well, but I found out that you really can prepare it very delicious. And after a while your body is craving it, well, at least mine does. If you are starving nothing beats a good piece of meat fried in butter accompanied by a cup of sallad. Yesterday I had my own version of Cordon bleu and it was soooo good. I sliced the chicken breast in the middle so I could open it like a bag. I laid some slices of cheddar in it and spiced it with peppar and paprika pulver. I closed it and wrapped two slices of bacon around it. Than I fried it in a pan, together with 1 cup of mushrooms. When finished I added 1/2 oz of heavy cream and tell you what... it was knocking me out how good that was. Try some ground meat (Is that the same like meatloaf?! I read somewhere else that you have to take care as they bland meatloaf with carbs. Well, here in Sweden it is always 100 % meat you get, so check this, your mum surely knows which kind to buy.) and mix it with 1/2 oz of riven parmesan, spices and garlic (if you like). You can form hamburgar out of it and it is fantastic to eat cold as well. Just check all the wonderful sites with recipes, I am sure your mum will help you with the cooking. You won't feel hungry on this diet and if you do, you are allowed to eat, out of the list of course. Try to find some exercise video/dvd or go and swim with your mum if this works for you. You will be amazed how good you will feel after some days. And what happy you will be on christmas! | Warm welcome to you Elizabeth! Glad your mum advised you to try Atkins and to post to this board...both excellent pieces of advice. It's great that you have her example too. I'm positive that you'll follow in her footsteps just fine and that by Christmas you'll see the "new you". Keep posting and let us know how you're doing. We're here for ya!

| Hi Elizabeth! Welcome to the board. You will see, as you go along, that there are so many ways to prepare any kind of meats, fish and eggs. I hope you're pleasantly surprised by some of the recipes you will come accross! Do check out the links Scooter provided you! Great sites!

| I know how you feel. I didnt eat alot of red meat, but found the more things I try..cooked differently, the more I like them. Since you like chicken, you can have a very low carb chicken soup. Bake a few boneless chicken breast, dice finely. Get you a 1 carb or 0 carb chicken broth.. You can add some chicken base (usually 1 carb) if you like more flavor-I usually leave it out. Add old bay, italian seasoning...perhaps a dash of soy sauce...whatever spice you want (check label).. Add your dice chicken..and baamm you have chicken soup. ITs good when you have a cold or a cold night.. Check out the recipe boards, they have such great ideas. You just have to experiment with different ingredients to make a wonderful dish.
