Question New Member here (question)

hello,

I posted once already but I have a problem. My husband eats NO veggies! Strictly meat and potatoes/rice/starch. Anyone have any ideas on meals that we both can eat on induction that don't include veggies. What can i do for him?

Hi, Michelle and welcome! My husband is not on Atkins, so I just serve him what I make for myself, but add carb items to his ... bread 'n butter, potatoes, pasta, whatever ... tonight we had a tomato and meat sauce ... his went over penne pasta, and mine (mostly meat, little sauce) went over a serving of green beans ; which, I guess, is pretty much what you're already doing, right? Boy, I hope your husband's taking vitamins, at least .. not even a salad passes his lips?

Hi Michelle
I still make my family potatoes, rice and pasta.I even bake them biscuits. I fix the same meat for everyone. If I am making corn on the cob or sweet peas for my kids I will use the steam bags or a little corning ware dish and cook myself a cup of broccolli in the microwave. Frozen veggies is best because you just use what you need. Does your hubby like salad? You could always just fix yourself a nice side salad and the lettuce head will keep well in the fridge. It wont go to waste. Try to keep Induction freindly snacks in the house like deviled eggs to grab a bite for those times you are feeling hungry and need something to hold your appetite until dinner while you are cooking. Sorry.. he will be doing Atkins with me.. but even with Atkins you still eat veggies to get your carbs that you are allowed. He eats no beans and nothing green. The only thing he will eat is corn and potatoes. He does eat tomatoes when it is in spaghetti but he does not like chunky tomatoes only tomatoe sauce. You can sneak celery and onions in as well as long as they cook up in the sauce.

Even some of the low carb recipeis use veggies but I cant fix them because he does not eat any veggies.

Are there any non veggie people here who still do atkins?

I see the dilema. Shame on his Mother for not making him sit at the table until he ate his vegetables.....JK!
Please tell me he takes a vitamin or something. Does he have a lage amount of weight to lose. Maybe that will motivate him.

I beleive we are supposed to have a small amount of carbs for brain function but carbs that come off the ok list. So Corn and potatoes would have to take a leap off the table. Most tomato sauces have sugar. I find the best one is Colavita marinara there is no sugar and no hidden carbs. You have to be careful and read the ingredient lists for corn syrup, dextrose, etc... there can be hidden sugar in many prepared foods.

Many people use cauliflower diced as a faux pasta or whipped up with butter and salt and small amount of cheese can give the illusion of mashed potatoes. Check out the recipe section in the forums and you will be amazed by the awesome recipe's. Good luck!

I bet if you sautee him some onions and mushrooms with some crushed garlic and a little salt...he will devour it.

And if you look around you will find some pretty interesting recipes using vegetables like cauliflower to make mashed 'potatos' ....he probably won't even know he's eating veggies. You should check out the Recipe's section of the board!!

If he wants to get healthy he's goign to just have to suck it up and start eating veggies. I myself have a hard time with it, but after a while I have found myself trying new things and actually enjoying them. I used to hate celery but now I love it with a little cream cheese and smoked salmon!!

Not eating veggies is not doing Atkins. There is no way to compromise on this.

On the other hand, there are a *ton* of different recipes available for veggies... and they don't need to be green. I was never someone who liked veggies - would order a chef salad without the salad part - and have actually grown to like a lot of them (okay, not lettuce or brussel sprouts). Maybe check out some of the recipe boards and make up small batches of things for him to try. Cauliflower can be eaten as a mashed potato, fried rice, or coated in cheesy goodness. Pumpkin can be made into a spicy chili lime type of thing, there are soups available (I don't like soups either but will actually eat these too) that you can make, plus you get to put as much butter as you want on everything!!

Yes.. he takes vitamins.
He wants to loose about 30-40 lbs.
I make my sauce from scratch so no sugar.
UMMM.... He eats no veggies.. that means no cauliflower at all.

As I said.. he eats no veggies.. so even if i put onions which he does not like chunky or mushrooms he will not eat it. I think he will know mashed up cauliflower is mashed up cauliflower. He has not eaten veggies all of his life. I dont think I am going to change him. I need suggestions on what I can fix that do not require veggies. Where can he get his carbs that he can have. The man can taste lettuce on his sandwich even if it is not on it.. if it touches his sandwich he can taste it. I have been dealing with this for 5 yrs and you can only fix chicken, beef and pork so many ways that does not contain veggies.

As for healthy .. the doctor told him he didnt have to eat veggies.
