| Welcome to the board! I'm afraid I'll have to rain on the parade, sorry... After induction, you should be introducing new foods in a specific order. First, you introduce vegetables -- a new veggie each week. Then you introduce diary -- a new diary product each week. Then only come nuts (i.e. also coconut). So you'll have to wait for at least 3 more weeks for coconut muffins. 5.4 lbs in the first week is great! As MommaRuthie said, read the book... or at least go through the sticky threads on this board. Good luck!

| Hi - No, I haven't read the book. I just used the online information. I am eating protein and fat in moderation (not the fat so much).. the MIM has 18g of fat and 12 g of protein-alot of fiber too hence low net carbs. Only 1.5 net carbs- that is better than 2 eggs and a nice change of pace.. Thank you though-- I do have to pick up the book Muffin in a Minute (suitable for Induction) Serving Size: 1 1/4 cup flax meal 1/2 teaspoon baking powder 1 packet splenda packet 1 teaspoon cinnamon 1 large egg 1 teaspoon butter Put the dry ingredients in a coffee mug. Or a bowl for a different shape. Stir. Then add the egg and the butter. Mix. Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately. Cream cheese would go nicely, too. Notes: 1.5 net carbs. Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 9.5 g. fiber; 223mg Cholesterol; 284mg Sodium __________________ |
