Welcome to the board, AJ!

Be sure to check out the recipe forum and Linda's Low Carb Website for great recipes that will keep you from getting bored with the diet.

One of my favorite recipes is a simple pizza omelette. Just mix up some eggs with diced pepperoni, a tsp or 2 of pizza sauce and an ounce of mozzarella cheese. Delicious and not boring!

Hi, A J

Upon reading through this thread, I've noticed that a few of the posts give the impression that Atkins is supposed to be a mainly meat, eggs, and cheese diet... nothing could be further from the truth.

Sure, you may be able to lose faster by eliminating veggies, but that is only if you aren't looking further than the tip of your nose. What I mean by that, is, that it is more important to look at the bigger picture. Vegetables are a mandatory part of Atkins, and of good health, in general.

So many people attack the Atkins WOE as unhealthy, and that notion springs from the experience of those who shun veggies and get sick, constipated, and can't maintain their weight loss for a lifetime. The Atkins eating plan emphasizes the benefits of protein and natural fats - AND nutrient-rich carbohydrates. There is a difference in the quality of carbs. The crux of the matter is in limiting carbohydrates and in selecting the right carbohydrates, those most full of nutrients and fiber and those with the lowest impact on your blood sugar. So, not only is it important to choose foods with low carb counts, it is also crucial to select the most nutrient-dense carbohydrate foods.

The goal is to eat as many "good" carbohydrates as your body can tolerate without interfering with weight loss or getting your blood sugar out of whack. And you will choose healthy, satisfying whole foods, ones that provide nutrients and fiber.

Vegetables, in general, contain "good" carbohydrates, although some are very high in carbs and not as high in nutrient value, and some are the reverse. Most vegetables provide fiber and many healthy phytonutrients (phyto means "plant"), those magical substances found in plants that help us ward off disease. Fortunately, the vegetables that are most dense in nutrients happen also to be those lowest in carbs.

About veggies - Before Atkins, I wouldn't touch a veggie with a 10 foot pole. And on that 1st attempt at Atkins, I did not put forth the effort to break out of my box and make myself try new veggies. I got to where I was eating a lot of nuts and dairy, but not eating many veggies. I think that is the #1 reason why I fizzled out on that attempt. Atkins really is a change of lifestyle... it's not trying to eat as closely as you can to how you used to eat. So on this attempt, I tried tons of new veggies. I can't believe how much better the plan works when you eat veggies! Unbelievable!!

OK, I'll step off of my soapbox now. I just had to get that off my chest. People PM me all of the time, asking for my best advice on losing the weight and keeping it off. VEGGIES is my answer.

Soooo, if any of you are up for a challenge, I challenge you to click on the link in my siggie to the 5th Semi Annual Veggie Challenge. The first time I entered the challenge, I wasn't eating any veggies besides lettuce. I put on my big girl panties, and tackled the challenge with an open mind. It was such a turning point in my Atkins journey, that I now head up the challenge myself.

Thanks for listening, everyone. I hope to see many of you join the challenge.

Yep. Eggs. Okay at first & then starvation would be better than eating any more of them!

I am going to have to get more strict with myself, though. I did stall @ 205 even though I came in (due to exercise on the treadmill) at nearly 1000 calories less yesterday than my calorie budget allows for... and I still went up a 1/2 pound. Maybe because of my Slim Fast low carb (net two carbs) shake? I don't know. This morning I'm 205.5

You need to get the 2002 DANDR book and READ it so you know what you're doing and why the plan works. You need more than meat and eggs, that is so far from the truth its ridiculous -- until you get your book and read it here are a few links to get you going THE RIGHT WAY.

For induction you should ONLY be eating foods on the acceptable foods list - the sugar-free jello is make with aspartame which is not an acceptable sweetner - Splenda is the recommended sweetner. If it's not on the list you don't put it in your mouth - it's a 14 day induction to rid yourself of addictions to food. You've been putting bad foods into your mouth for years - give yourself 14 clean days to change. Drink at least 64oz of PURE water (coffee, tea, kool-aid are not PURE water), exercise is also mandatory - get up and get your heart moving to help tone and loose weight. Stay off the scales until the end of induction, and don't worry if someone else is losing 9 pounds a day you're body is different than anyone else's.

I honestly wish I could eat more veggies, I just dont like them. I can tolerate corn, peas, lettuce, cucumber and tomato and snow peas, but that is it. I also wish I could eat fish...allergic..so I cant. I do know that veggies do help weight loss and I am sorry if I made it seem that meat was the only thing that you could eat, but I have noticed when writing my grocery list for induction...the main part of the list...was mostly meat.

imagoodone, thanks for the advice on the jello. Before the newest atkins book wasnt aspartame an ok sweetener? So really what was the difference except the whole cancer thing? Thanks again.

Lindas low carb site, is awesome...I love how she has pictures and rates the foods.

Your weight can vary up to a couple of pounds from day to day depending on how recently you have eliminated. Fluctuations from one day to the next aren't really meaningful.

Dr. Atkins tracked the diet and losing of thousands of patients and found that the use of aspartame often coincided with stalls in his patients, and while it is difficult to prove what causes any stall, he found it suggestive enough to discourage aspartame as a sweetener.
