| I started cooking with coconut oil about 2 weeks ago after reading an article in a magazine. I hadn't thought about eating the stuff straight from the container though. I tried it tonight, and the taste was not bad. The texture takes some getting used to. |

| So how is everyone liking the coconut oil?? I am still using it and absolutely love it! I couldn't find it on the shelves for a about 4 days, and was having withdrawls. I love the way it makes my chicken tastes with a little Chili roasted garlic seasoning..cook till done, then chop the chicken up and put it on a bed of fresh spinach leaves, have a little warm coconut oil reserved to drizzle on the spinach prior to the chopped chicken... the heat of the warm chicken softens the leaves a little, and it is delicious. My new favorite! A little extra goodie for the above spinach salad. It is soo good! I had a little left over chicken bits in the pan from earlier, and it dried out just a little from the heat of the pan. I had also just finish toasting some unsweetend coconut, and toasted some pecans as well. So as I am cleaning up , I am thinking , what shame to waste this little bit of chicken, about a 1/4 c., so i figure it would be kind of like bacon bits on a salad... better yet!! I tossed it with some of the toasted coconut and pecans, make about 1 c. of salad crumbles.. This just made my spinach salad very exotic and yummy! Try IT!

| Laciepie, I can't tell any difference with my weight loss, but then I don't eat the 3 tablespoons a day that I've read makes the difference. However, I also LOVE frying my chicken breast strips (and anything else I fry) in coconut oil. It seems to give a crispier result than canola oil. Your chicken with chili roasted garlic seasoning on a bed of lettuce sounds wonderful! And so do the salad crumbles!!! I bought some coconut from the health food store, got it home, tasted it -- and it was sweetened. So I have to go back and get some unsweetened. When I do, I will try your salad topping recipe. Thanks! |

| I am a complete coconut oil convert! I bought some at my local health food store - it was a bit pricey, but worth every penny to me. I mix it with green tea and easily get my three tablespoons-worth in. Someone said they didn't like the way it made their lips feel after drinking it...yes, it is a bit oily, but I discreetly wipe my lips with my finger and rub the oil onto my rather dry elbows - they are softening up nicely. Have also fried a few prawns in a tablespoon of the oil and added a little garlic, then served on a bed of green salad leaves with a tablespoon of cream. Very enjoyable light dinner for me. Keetje |
