| Hi Quo, It's okay hon. I bake a zuchinni bread with soy flour and flaxmeal. It bakes wonderfully! Go for it. BTW, if you would like my zuchinni bread recipe, i'll give it to you. Love ya, Sherri

| Sherri, I would love that recipe. The legume rung is just around the corner after I finish detoxing from fake sugar *eyeroll* In case anyone else is curious, I pulled this off the paleodiet website: Diets, Low Carb Diets, High Protein Diets, HDL Cholesterol, LDL Cholesterol, Syndrome X Studies of ground flaxseed during cooking at temperatures encountered during baking (350 degrees F for 2 hrs; 400-425 F for 20-25 min or 662 F for 60 min) show that there is no degradation of the alpha-linolenic acid to oxidized secondary lipid compounds (Flax Council of Canada). However, I have recently learned, after publication of my book, that a distinction must be made between flaxseed and flax oil. For reasons that are unclear, flax oil must not be used during cooking.

| Yep, it's the flax oil that was of concern. Here's the recipe Quo. It was my Grandmas Freda's recipe. Only instead of white flour, I replaced it with flaxmeal and soy flour. Enjoy! Zuchinni Bread Pre-heat oven to 325 degrees/ grease and dust w/ soy flour 1 bread pan. 3 Eggs 1 cup oil 2 cups sweetner of choice (I use Smart Sweet Xylitol) 2 cups grated zuchinni 2 tsp. organic vanilla extract 1 cup flaxmeal 1 cup soy flour 3 tsp. cinnamon 1 tsp. sea salt 1 tsp. baking soda 1 tsp. baking powder 1/2 cup chopped walnuts (optional) Beat eggs lightly, mix with oil, sweetner,and zuchinni. set aside. Sift together soy, flaxmeal,baking powder, soda, and salt. Mix with zuchinni mixture. Mix well, add vanilla. Fold in nuts. Place in 1 soy floured bread pan. 325 degrees, Bake for 45 minutes and check with tooth pick. I loved having this for breakfast. It's great to put in a thick sliced toaster and toasted with butter. Yummo! I havn't had it since christmas. I'm on a sweetner fast. 137 days today without any sweetners. Longest i've ever gone. I don't know how long i'll go without. Just taking one day at a time. It was so hot today that I even thought about icecream. So, like I said, one day at a time. Take care Quo! Love ya, Sherri

| Flaxseed oil should never be used for cooking, as the heat destroys the fragile Omega-3 essential fatty acids it contains. It can however be safely used when serving food though, and is delicious when used on salads, blended into mashed potatoes, or eaten with hot porridge or creamy smoothies. (that's what I see repeatedly when researching this)
