I have too much sour cream in my fridge would like to use it in some recipes before it goes bad. They need to be induction friendly and not desserts. Can be main dishes, side dishes or soups. Thanks!!

I'm a big fan of mixing a tablespoon or two of sour cream with dry ranch dressing mix and using it for dip, if that's of any help at all. LOL

Trust me on this one. Sour cream and yogurt almost NEVER go bad. The process of culturing milk was developed to extend the life of the product. I've been told that old sour cream get's a tiny bit bitter, but I've never noticed it.
As far as a way to use it...
Well, Penzey's sells toasted onion that's a very close facsimile to the toasted onion in onion soup mix (without the extra garbage). Do you see where I'm going here?
Toasted onion
Sour cream
A little salt
mix, refrigerate for a couple hours
Pork rinds
Yum!

Of course it is a help. Any and all suggestions appreciated. I haven't really started dipping yet but I have put dry ranch dressing mix on my grocery list. I have 2 containers in there and when you are using 1 T on stuffed cauliflower is seems like it might go bad before I can use it all. Thanks Brook!Elsie150

The dry ranch is divine mixed with cream cheese and used to smear on top of fried chicken, too

I like Uncle Dan's Ranch mixes. Southern or regular. I follow the dip directions. It uses up quite a bit of sour cream and we all love it. Well my fried chicken IS baked, actually. LOL
I dip it in egg, coat it in seasoned crushed pork rinds and then bake it. Crispy and yummy! - And yep, then I smear the ranch cream cheese on it and chow down.

Hey Bugaboo....I must have led a plain simple life....LOL. Before now the only things I ever did with sour cream was put in on was...can I say the word...the vegtable that we subsitute cauliflower for...and also mixed it with salsa for dipping. Which again would led me to pork rinds and I don't feel safe from them. Never thought to try it over a steak..will give that a go this week..I am limited though in induction on the amount per day I think...will have to look that up...I have always just used seasoning salt...boy...I have led a pretty bland food life until now huh? Simple Beef stroganoff
1-2 pounds beef sliced thinly
1 pound mushrooms, quartered
1 cup thinly sliced onion
salt and pepper to taste
oil
2-4 tablespoons sour cream
1 tablespoon dijon mustard
1 tablespoon chopped fresh dill or parsley
Heat oil in a skillet and fry the beef, until browned and cooked to your preference. Cook it in batches to prevent overcrowding which will steam the meat rather than saute it. Remove from skillet and set aside. Add more oil to the pan if needed and saute the mushrooms until they are cooked through and the liquid they produce has cooked away. Add the onions and cook only until they are soft. Return the beef to the skillet. Cook until warmed through. Add salt and pepper to taste. Remove from heat. Add the sour cream and mustard mixing it to coat the meat and veggies. Sprinkle with parsley and serve.
If you don't like beef, you can substitute chicken.~Megs~

YUM! That sounds really good!
I also found this one. Which sounds pretty good. Will have to check and see if it is induction friendly first though. Might be too much sour cream...I guess I could always add that individually. Thanks so much!
Beef Cabbage Stroganoff
serves 4
16 ounces lean ground beef
1 teaspoon garlic powder
2 tablespoons unsalted butter
5 cups shredded cabbage
1/4 cup low sodium soy sauce
1 cup sour cream
pepper -- to taste
Brown beef, drain off fat.
Add garlic, butter, cabbage and soy sauce.
Cook on Medium-High until cabbage is almost done.
Add sour cream and pepper, stir well.
Cook until well heated and not too liquidy.

MMMM... one of my faves right now is equal parts sour cream and cream cheese, vanilla extract and the tinist bit of splenda,, not even a teaspoon, mashed all up together.
BUT... we use sour cream for lots of stuff,,,mix it with some hot sauce and use for chicken or beef... a good thing is to brown some ground round, mix with lettuce, tomatoe, bit of cheese (depending on where you are), some sour cream and salsa or hot sauce... taco salad!
AND, instead of dipping pork rinds (not a fan of those at all), you could dip celery, radish, cucumber, pepper... all those salad veggies......
