I'm running out of ideas for what to cook, and was wondering what some of you guys' favorite recipes are. Maybe I can swipe some of your ideas and use them in my kitchen.

This is my fav and since you look a little Latina I hope you'll love it as much as I do.
MEXICANCASSEROLE
1 lb ground beef
1/4 cup diced onion
3 eggs
1/3 cup mayo
1/3 cup heavy cream
2 tbsp chili powder
1 tbsp cumin
1/2 tbsp oregano
1-2 cups shredded cheddar cheese
1 can (4.5 oz) green chili peppers, drained
Brown hamburger meat and onions, drain and add 1 tbsp cumin, 1 tbsp chili powder, oregano and drained can of green chilis to meat mixture. Put in a buttered (or Pam-sprayed) casserole dish. Mix eggs, mayo, heavy cream and 1 tbsp chili powder. Pour gently over the meat mixture. Top evenly with shredded cheddar cheese.
Bake at 350 for 30 minutes. Serve with some shredded lettuce and a tbsp of sour cream. 4 servings.
I leave out the oregano since that is an Italian taste if you ask me. I used 3 different type of chili powder. I also think I cover it for the first 15 minutes. I thought I got it for this board but I didn't see it in the recipes section. Anyway I can't take the credit someone else posted it... Wow, Bugaboo, I just got on that site and saw a recipe for fried 'rice'. I have been wanting something like this for quite some time. I even went out to the store to buy cauliflower. I made it just now, can you say delicious. Thanks so much for posting that link, I'm sure I'll be trying many of her recipes.

I have to agree with Bugaboo here. Though I don't start until Thursday I will be following a lot of her menus...I like a bit more structure in the beginning before I branch off on my own and she has induction menus there. And the pictures make you hungry just looking.Elsie150

On the site that Bugaboo gave you, there is a recipe for stuffed peppers. I absolutely love this recipe. Instead of tomatos, I put salsa in. Gives it an extra kick and keeps it moist. I tried the normal way, but it was a little dry for my tastes.
Great thread by the way! I'm always looking for ideas as well!
