  • Chili recipes and Cheesecake recipes pls

    I am in OWL but not in the legumes step yet. Does anyone have a really good chili recipe without beans that I can use.

    Also, I need to make a kick-butt cheesecake for Thanksgiving. Any help would be appreciated!!

    For cheesecake, I follow the recipe on the packages of Philadelphia Cream Cheese. I substitute artificial sweetener for the sugar. For the crust, if you are in OWL, you can get away mixing crushed nuts with whey protein, bind it together with melted butter, press it into the pan and pre-bake it until it's golden brown.

    Chili: I don't use tomatoes in my chili---just dried ancho chilis that I roast in the oven until I can smell the peppery aroma, then I grind them into a powder. Otherwise, my chili is just browned meat, onion, garlic, the ancho chili powder, cumin, ground coriander and a tablespoon of unsweetened cocoa powder.

      Thanks for the recipe, Meg. I have never heard of cocoa powder in chili though. Is your chili pretty spicy?

          I like the texas chili recipe from this website www.lowcarbluxury.com of course I doctor it up cause I have a hard time following any recipe as its written, but its a good starting point. That website has alot of yummy stuff, just be sure you check the recipes against the allowed foods because its a general lowcarb site, not nesicarily Atkins lowcarb.

              Chili: if you means spicy as in "hot", I'd say it's medium. IF you mean "spicy" as in lots of flavor, then it is. The cocoa powder adds an additional layer of flavor---it doesn't taste chocolate-y at all.

              Cheesecake crust: you really don't need it. Just butter the pan really well, or use cooking parchment paper to line the bottom of the pan....

                Can I have soy beans if I am not on the legumes rung??

                    Last thankgiving (I think) I remember a discussion about this, and someone said that they were going to mix flaxmeal with butter and try that as a crust. I don't remember if he/she was successful at it.

                      I made a cheesecake the other day that was ok and I used 1/2 cup crushed pecans, 1/2 cup crushed almonds and 1/2 flax with butter and it came out ok for the crust!

                        Stick To Your Ribs Chili
                        From: Di Bauer
                        2 pounds ground beef
                        1 heaping teaspoon minced garlic (about 1 large clove, fresh)
                        1 tablespoon red pepper flakes
                        1 14.5-ounce can diced tomatoes with green chilies
                        1 15-ounce can no sugar added tomato sauce
                        1 8-ounce can no sugar added roasted garlic tomato sauce
                        1 tablespoon cayenne pepper (or to taste)
                        1 tablespoon onion powder
                        1 teaspoon paprika

                        1/8 teaspoon cinnamon
                        1/8 teaspoon nutmeg
                        sour cream (optional)
                        shredded cheddar cheese (optional)
                        Brown the ground beef with the garlic and red pepper flakes; drain
                        thoroughly. Combine the browned meat/spices with all the remaining
                        ingredients except the sour cream and shredded cheese. Place mixture
                        in a crockpot and cook on high 3-4 hours or low 6-8 hours. Serve
                        hot, garnished with dollops of sour cream and sprinkles of cheddar
                        cheese, if desired. Freezes well for a quick lunch or snack.
