how do 3 cups veggie = 12 carbs?

  • how do 3 cups veggie = 12 carbs?

    I read that I am supposed to eat 2 - 3 cups of allowed veggies a day.
    I also read that 12 - 15 of my carbs are supposed to come from veggies.
    If I eat 2 cups of lettuce, 1/2 cup mushrooms and 1/2 cup tomatoes am I in the right range?

    Go to www.fitday.com and enter your stuff. It is a free site that is a great tool for keeping track of your eating. Also read the stickies at the top of the Induction forum. There is info there as well.

      That's the big problem with eating lettuce a lot. It's one of the lowest carb count vegetables. I would definately take a look at the list and try to include some of the higher carb veggies, espeicially look for things you've never tried before. So much good stuff out there.

        If you're reading this information from the Atkins.com website, they don't treat the Induction vegetables as the book, Dr. Atkins New Diet Revolution, 2002 ed does. In order for Atkins.com to make that 12-15 net carb recommendation they have done away with the 3 cups of vegetables rule of DANDR 2002. There are problems with that. For example, it's quite possible for someone to eat 15 net carbs of tomatoes, a vegetable (fruit really) that has a high glycemic index and might cause blood sugar/insulin issues, which will interfere with weight loss.

          In time, you will learn which veggies pack the most "punch" when it comes to carbs, nutrition, and fiber.

          For example... for salad veggies:

          1 cup of jicama contains 5.1 net carbs
          1 cup of red bellpepper contains 6 net carbs
          1 cup of yellow bellpepper contains 8.1 net carbs

          So, even if you ate only from the Salad Veggie list, it is possible to easily get 12 to 15 net carbs. And a lot of the veggies from the "Other Veggie" list are even higher in carbs. So, you could choose two cups from the list above, plus one from the "Other" list.

          For example... for "other" veggies:
          1 cup of canned pumpkin contains 8 net carbs
          1 cup of turnips contains 6 net carbs
          1 cup of spaghetti squash contains 6.98 net carbs
          1 cup of kale contains 5.37 net carbs
          1 cup of leeks contain 10.99 net carbs

            My problem is, I didn't estimate how many carbs my broccoli, kale and celery actually had, so I ended up OVER for the first 3 days of induction! I guess I'm starting over, grrr.
            Oh yeah, and too much Splenda, too!

              Don't forget to subract fiber for the "net carb" amount. Fiber isn't digested and does not have an impact on your blood sugar.

                Even if you feel you need to restart induction because of not getting it quite right, do make sure you weigh yourself after 14 days from when you started first.

                This is to see from the chart in DANDR what sort of metabolic resistance you have to weightloss and help you plan your Atkins journey better.
